Banana Walnut Breakfast Muffins

These muffins are perfect for breakfast and for when you want a taste of sweetness but don't want to overdo it. The healthy blend of bananas and walnuts will get you energized and ready for the day.

MAKES APPROX 12 MUFFINS

  • 3 medium to large bananas (very ripe if possible)
  • 1/4 cup coconut oil (or applesauce if you don't want to use oil, but the muffins may not be as fluffy)
  • 1 cup granulated sugar 1 teaspoon cinnamon
  • OPTIONAL: 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup chopped walnuts

INSTRUCTIONS

  • Preheat oven to 375 degrees
  • Mash the bananas in a large bowl
  • Add the oil (or applesauce), sugar, cinnamon, and vanilla extract (if using) to the bowl and mix
  • In a different bowl, combine dry ingredients (flour, salt, baking soda)
  • Add dry mix to the bowl with the banana, oil, and sugar mixture and stir to combine
  • Fold in walnuts into mixture
  • Pour scoops of the mixture into the lightly oiled (or lined) muffin pans (a little over 3/4 full, make sure not to overfill)
  • Bake for 25-27 minutes or until a toothpick comes out clean
  • Let the muffins cool for 5-10 minutes before removing from muffin pan
