INGREDIENTS
- 2 sweet potatoes
- 1 cup lentils
- 1/3 cup peanuts (chopped)
- 1/2 of a large orange (or 1 whole small orange, peeled and sliced, each slice cut into thirds)
- 1 tablespoon lime juice
- Salt and pepper to taste
- OPTIONAL: 1 teaspoon ground red pepper/cayenne
- OPTIONAL: cilantro (roughly chopped)
INSTRUCTIONS
- Roast potatoes at 350 degrees in an oven until tender (leave oven on after cooking)
- Cook lentils until they reach the tenderness you desire
- Cut the potatoes in half, spoon lentils over halves, place back in oven for 3-4 minutes
- While potatoes are heating, roast peanuts over medium heat (oil optional, I've found peanuts usually have enough of their own oils to roast)
- Take potatoes out of oven and immediately plate them, season with salt and pepper to taste
- Sprinkle peanuts, orange pieces, and lime juice over potatoes then followed by red pepper and cilantro (if using)
NOTES
- I like this recipe because it has a little bit of everything: the vitamins and fiber of the sweet potato, the protein in the lentils, a little bit of tartness from the orange pieces, a small touch of heat from the pepper, and the added freshness of the lime and cilantro.
