An original recipe for Pumped Up Snickerdoodle Puffs from The Purple Dog Vegan.  These cookies are light and vegan.

These cookies are light and puffy so they're great for a no-guilt, quick snack that won't weigh you down.

  • 1 & 3/4 cups flour
  • 1/2 cup white sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 cup vegetable oil
  • 1/2 teaspoon apple cider vinegar
  • 4 ounces applesauce or 1 small apple (peeled and very finely grated or shredded)
  • 1 tablespoon vanilla-flavored almond milk
  • 1 tablespoon vanilla extract
  • Coconut sugar or cinnamon sugar to sprinkle on top

Preheat oven to 375 degrees

Add flour, sugar, salt, and baking soda to a mixer or bowl and mix

Add vegetable oil, apple cider vinegar, applesauce (or shredded apple), almond milk, and vanilla extract to a different bowl and stir to combine

Mix oil mixture into dry ingredients until a dough forms

Roll dough into balls and place on a prepared cookie sheet

Bake for 10 minutes or until cookies become puffy and golden brown

Sprinkle with coconut sugar or cinnamon sugar while warm
