
- 1/2 cup granulated sugar
- 1/2 cup coconut sugar
- 1 cup water
- 1/2 cup lightly packed fresh mint
- 4 cups frozen mixed berries (I used cranberries, blueberries, blackberries, and raspberries)
- 1/2 cup lemon juice (approx 2-3 lemons)
Add sugars and water to a small pot and heat over medium while stirring frequently until the sugar dissolves
Add mint to pot, remove from heat, and let sit for 20 to 30 minutes
Strain syrup into a bowl and refrigerate until chilled
Add frozen berries, lemon juice, and syrup to a blender and blend until smooth
Pour mixture into a shallow pan or bowl and freeze until the mix is solid enough to scoop
If it becomes too solid just leave it out at room temperature until it thaws enough to scoop into serving bowls
You don't have to be from Lake Minnetonka or a Prince to enjoy this cool and refreshing berry sorbet. The lemons really make it pop, rock, and roll at the same time.
